This week has been a busy one, and has not left much space for being creative, today was my last chance to do this for the week, while the family are at school. After an over whelming complaint about the lack of edible goodies in the cupboard, today had to be for creating edible art, A.K.A fairy cakes, I believe in USA they would be called Muffins ( although I don't use milk), and in Lancashire we'd call them buns.
Before I made 'buns' which I can do with very little effort these days, I decided to test out a carrot cake recipe I have found that I love for 2 reasons;
Firstly, these is no requirement for passion fruit, sultanas, raisins, or walnuts.
Secondly, after careful consideration to quantities, of flour, sugar, eggs, and spices, it declares a requirement for 3 large Carrots.
How large is a large Carrot?
A friend helped and pointed out that it was obviously bigger than a small carrot, which obviously is helpful (ish) if you know the size of a small carrot. Anyone who states at this point that it's smaller than a large one, doesn't get a piece of cake!
Anyhow, having muddled my way through carrot quantities I proceeded to scrape/ pour the mixture into a baking tin, and found to my horror that the base of my large mixing bowl has a hole in it! How am I supposed to make the quantity of buns required for my daughter now, non of the others are big enough, for the substantial quantities that are usually required.
I think I'll go and knead my bread dough some more while I consider my options carefully, and work out which scenario will get less complaints
